Interestingly, and counterintuitively, the dynamic thrust equation is basically linear. Because even if there was no drag force, the quad's speed would be limited by the prop's advance ratio. For many quads, dynamic thrust will play a bigger part in the acceleration curve than the drag will. The sim should have a dynamic thrust curve similar to the one in the link below if it doesn't already. Once the overall thrust is lowered, there should be less need for excessive drag. If the thrust is too high, you'll feel like you hit a wall when the drag finally balances out the top speed, which is currently how it feels. Battery sag play's a significant role and the load our motors/props provide is no joke. In reality, the actual thrust of a quad will be much lower than a bench test when it's a single battery providing thrust to all 4 motors instead of a power supply giving unlimited current to a single loaded motor. Then likely they've measured the top speed of a quad and increased drag to make it match. My guess would be that the game is using bench test data for the motor thrust. The quads likely have way too much thrust. Three things feel off on this sim and all manifest in the throttle response: Thrust, drag, dynamic thrust. That tends to have the biggest hit on performance My recommendation would be to try running some of the other sims at the lowest monitor resolution possible.
